Jacob George is the Robert W. Storr Professor of Hepatic Medicine at the Storr Liver Centre, Westmead Institute for Medical Research, University of Sydney and Head of the Department of Gastroenterology and Hepatology at Westmead Hospital. He undertakes basic and clinical research on MAFLD, hepatitis C, liver cancer and liver fibrosis. He is a current senior Editor for Seminars in Liver Disease and Journal of Hepatology Reports. He was a previous Associate Editor for Journal of Hepatology and previous Chair of the Australian Liver Faculty.

Final year PhD Candidate (Deakin University) exploring mechanisms of fasting and postprandial hyperinsulinemia in healthy young adult without obesity. Extensive clinical and industry-based experience as a dietitian. Associate teaching fellow within the School of Exercise and Nutrition Science. Interested in early intervention and prevention of cardiometabolic disease.

Dr Javad Anjom-Shoae is a Postdoctoral Research Fellow (since 2025) at the Centre of Research Excellence in Translating Nutritional Science to Good Health, Adelaide Medical School, University of Adelaide. His research focuses on the effects of nutrients and non-nutritive compounds on gastrointestinal function, appetite regulation, and glucose metabolism in humans.

Miss Zhou, a graduate student at Southeast University, analyzed multicenter data under the supervision of corresponding author Prof. Li. Their prospective study integrates imaging-confirmed hepatic phenotypes with clinical parameters to stratify steatosis-fibrosis risk profiles in Chinese T2DM populations.
